The bottom line here is, what is it as a client "the end user" wants out of the place they frequent.

We have some obvious choices, quality, friendly service, nice looking setup, etc. etc. etc. But, I guess the question is, what keeps you loyal to one place over another?

From personal experience, I'd opt initially for the quality of the product, then secondary, the personal interaction involved, especially if they talked to me on a first name basis being the clincher. Another element involves being prompt with things, I know you barristas are at the mercy of your machines if they give you trouble, but the average person will not enjoy losing his coffee break due to a malfuction.

Taking my own point of view to the side, what is it you are looking for at your usual cafe, drive thru, cart, that sets them aside from the rest?

Well first of all if the don't serve Seattle Gourmet Coffee, I just keep on going right past the establishment Twisted Evil ...Just couldn't resist Wink , Seriously, I look to see how clear the establishment is. If I can not see the inside, then I take a look at the out side. Is the surrounding area of the building clean? No cig butts in the parking lot, how do the windows look? Is the general appearance up to grade, i.e., does the paint still look good, or does it need some touch up work. If I'm driving around and see that a place looks nice and clean from the outside appearance, I'll more than likely stop.

Ok, we have 2 avenues when it comes to setting up shop. 1st, you have the flashy, look at me type of approach, then you have the "Hi Jerry, how are things going with you and your wife and kids". You are taking one place and trying to appeal to 2 different objectives, yet the same market. My opinion "yes I have many" is the quality of product being far superior is what is going to bring in the hard core users, but the actual barristas, how they interact with their clients equally as well as serving a tasty coffee drink is what's going to win that croud over.

I guess, you want the best of both worlds, if you can find the right people to fill the rolls, then you are ahead of the game.

I don't like having interaction with the barista's. The quality is the most important. I care most about how the shot pulls. Most often they are too fast. I also hate it when I go into a slower volume bar and they are using large steaming pitchers that are not being steamed freshed. Instead they steam a huge pitcher past the burning point over and over again. Sorry, I had a really bad coffee yesterday morning and the experience has stuck with me. There is nothing worst having a terrible coffee first thing in the morning.

Simple advice. If you don't like it then don't go.
